Season the pork well; heat a large casserole and add the butter. When the butter foams, brown the pork well on all sides. Add the cardamom seeds and cumin and let them fry in the butter for a moment before adding the garlic, saffron and yoghurt. Bring to simmering point. The yoghurt will likely split but do not worry about this. Simmer very slowly for about 2–2½ hours (about 1½ if using shoulder chops), until the pork is tender. Leave the lid of the casserole half off while you cook the pork, so the sauce will thicken.
